Finger Sandwich

This is a small snack for those who do not want to eat a lot. These can be very easy to make for children their lunch boxes and they will want to lick their fingers afterwards.



INGREDIENTS:

  • ½ cup egg less mayonnaise.

  • 2 tablespoon green capsicum finely chopped

  • 2 tablespoon red capsicum, finely chopped

  • 2 tablespoon yellow capsicum, finely chopped

  • ½ teaspoon pepper, crushed

  • ½ teaspoon mixed herbs

  • pinch salt

  • 4 slices bread, white / brown

  • 2 teaspoon butter

  • 1 cucumber, sliced

  • 4 cherry tomato, halves

DIRECTIONS:

1. Firstly, in a large bowl take ½ cup egg less mayonnaise. You can alternatively use hung curd if you are diet conscious.

2. Add 2 tbsp green capsicum, 2 tbsp red capsicum, ½ tsp pepper, ½ tsp mixed herbs and a pinch of salt.

3. Mix well, this will be our mayonnaise stuffing.

4. Further, take 2 slices bread and trim sides.

5. Spread ½ tsp butter over each slice of bread.

6. Now spread 2 tbsp of prepared mayonnaise stuffing.

7. Place slices of cucumber over stuffing.

8. Cover with another bread slice, cut into pieces and garnish with cherry tomato’s slices.

9. Serve finger sandwiches.
